My daughters lunch for tomorrow and my banana bread recipe!


So here is my daughter’s lunch packed for kindy tomorrow. It consists of homemade processed sugar free banana bread, cheese slices, capsicum in sticks, leftover fish from dinner, fresh pineapple in chunks and homemade tortilla wraps with Vegemite and cheese inside. My daughter was excited already when she saw it earlier tonight so it is a good sign it will all get eaten!

My processed sugar free banana bread recipe-

1 1/4 cups rolled oats
3 cups wholemeal self raising flour
2tspn homemade baking powder (I used the Thermomix everyday cookbook recipe)
3-4 overripe medium bananas (depending on size) peeled and mashed
150g melted butter
1 1/2 cups full cream milk
2tspn vanilla bean paste

**Please note- you can add 1/2 to 3/4 of a cup of your preferred sweetener or sugar. Our family likes it as is, without any extra sweetness and the bonus of it being a little bit healthier doing it this way.**

Heat your oven to 180 degrees (I usually do about 160-170 degrees in my fan forced oven). Line your baking tray with baking paper or muffin trays with spray oil or muffin papers.

Put bananas in the Thermomix bowl or mash the bananas with a fork until smooth or with electric hand beaters in a large bowl to minimize the splattering (speed 3 for 30 seconds in TMX). Set aside in another bowl.

Put the rest of the ingredients (except for banana) into the Thermomix bowl and mix on speed 3 for 10 seconds. (If using electric hand beaters mix on a medium speed and adjust to faster or slower if need be until combined).

Then add the banana and mix in the Thermomix on speed 3 for 30 seconds or until well combined with the electric hand beaters.

And ta-dar!!! You have super yummy banana bread to put into either muffin trays or a large deep baking tray or 2 x loaf tins.

Cook in the oven for 40-45 minutes or until a skewers slides out clean when you insert it in the middle.

Wait for it to cool for 10 minutes or so before you lather it in butter and enjoy (oops did I just say that!? Put as little or as much as you want haha).
